i was in malaysia a few weeks ago and fell in love with this Indian flatbread called roti chanai or roti john or something. thay all different kinds, made with egg or garlic or cheese or combinations of that, and were served with a curry dipping sauce. does anyone know where i can get a recipe?

Dear Heidi, if you do get responses, please pass it on to me as I am dying to eat roti chanai. I have not been back to Malaysia for 7 years, since the loss of my mother. I do miss the food tremendously. Thank you. I will gladly share any other Malaysian recipe that you are keen on that I may have.

Roti Canai (aka paratha.. =))
Inbgredients
1 egg
1 cup warm water and 1 tsp salt mixed together
3 tbsps ghee or butter
600 gms flour
Sugar to taste
Instructions
Mix together flour, water, sugar and egg. Knead until a soft dough is formed. Form into small b alls and keep overnight. When you are ready to make the roti canai, spread the ghee on the b_alls and flatten. Heat an iron griddle and fry the rotis individually until cooked.
Hints:
1.I find coating the roti b alls with ghee before 'rising' them helps in kneading.
2. Kneading: Flatten b all and stretch out as far as possible. Fold edges inward, continue until
you have a round shape 6-inches in diameter. This is required to
give the bread a layered texture.
3. Cooking: Fry the roti individually until
crisp and golden, adding more ghee or oil as necessary.
4. Kneading 2: Most home cooks use the bottom of a very large cooking pan and with
oiled hands, slowly stretch and push the dough out.
5. If you stuff this with finely chopped onion and hard-boiled eggs, I believe that makes it Roti Telur.
You can serve this hot with dal or egg curries. Here's a korma 'curry base' that you can drop random cooked vegetables into. Or hardboiled eggs. Works well for me.
~ 600g veggies (~ 5-6 eggs, harboild, halved)
3 cup coconut milk (you can get this from a can now)
1/2 cup oil
2 cardamoms
2 star anise
2 red chillies
3 cm piece cinnamon stick
3 cloves
3 cm piece ginger
4 cloves garlic
4 tbsps garam masala
6 shallots
Pound 3 shallots and 2 cloves garlic together.
Mix with garam masala and 1 tsp water. Blend well into paste.
Slice finely the remaining shallots and garlic.
Heat oil and fry the sliced shallots and garlic with the spices until fragrant.
Add in the blended kurma powder and fry further until oil separates.
Add in the veggies and 1 cup water. Cook until they are tender.
Pour in the coconut milk, bring to boil.
If you are using hardboiled eggs, add them here.
Season with salt to taste and simmer until the gravy is thick.
Serve hot with the roti canai, and enjoy =)
PS: If you have an indian/SE Asian speciality grocery store near you, you may be able to get these ready made as paratha.

In the NJ area, you will find these rotis in the frozen sections of Indian groceries. They will be labelled as Ceylon porotta. You will be quite satisfied with them until you visit the Penang Restaurent in Edison where you can eat them freshly made :-) I have seen these rotis in Calcullta also, it is called Mogalai paratta there. I beleive the same stuff is available in Sigapore under the name roti paratta. It is very difficult to make them at home unless you know the knack of thinly stretching the dough with your hands, by swirling it around.

Here in NYC'c Chinatown, you can find the Roti Canai dough in the frozen section of a Filipino/Malaysian store on Mulberry between Canal and Bowery. You just take a disk of dough and pan fry it for a minute. No more stretching and sticky hands! They also sell yellow curry in cans that you add coconut milk with and heat up adding potatoes and chicken for the authentic taste! Also at Kam Man foods (they also do mail orders)on Canal street, they sell an onion puff paratha bread dough in their frozen foods section.

By the way, when in New York City, visit Penang or Nonya restaurants where you can watch them make the puff paratha/roti canai. It takes a lot of skill to stretch the dough as thin as paper. A friend of mine who is from Malasya told me that if you accidentally tear the dough as you stretch it, it is no good an must be thrown away since it is oily and difficult to mend it back together.

A Malaysian Restaurant in Richmond "Banana Leaf" had delicious Roti Chanai...the dough was spun in the air like pizza dough...this restaurant had good reviews in a newspaper according to my friend that recommended we go there for lunch...the restaurant is a block away from Ranch 99 Market...Sorry, I don't have the address...Although just a block away, I believe Ranch 99 address is listed in El Cerrito...

I've trying to visit this Banana Leaf rest.- it is in Milpitas, CA. at McCarthy Ranch Dr. I heard it is very good. It will be my first eatout at a Malaysian rest.

I too have tasted Roti chanai in NJ in Penang Restaurant(Malaysian Rest.). It is just unbelivable and u will not forget for the rest of ur life. We used to have that every sunday. I too think that it is difficult to make at home.

I just wanted to say, that I am currently living in Penang, Malaysai. This Roti Canai is so good. I think I am addicted. It does look quite difficult to make at home though. Locally, this food is so cheap, about 20 cents apiece with the dal sauce!! If you get the chance to eat at a Malayasian restaurant, try it there's nothing like it!!

I haven't had Roti Chanai for nearly thirty years... I have never been able to come close to duplicating it. The best was from Hammeed's restauraunt at the head of Jalan Gurney in Kuala Lumpur. Before I left I begged for the recipie, and they told me "Simple... egg,flour,salt, water, and ghee..." Sundar's above sounds closest. If anyone has access to any other recipies, or has success at home, I'd love to hear about it. It would be especially good if someone living in Malaysia would do some "research" and post the results! Best

for a realy good roti canai try the CoCo Curry House, in Wing Wah Lane (rat alley), just off Lan Kwai Fong in Hong Kong (up the hill from central station) - just superb, great shownaship as well spinning the dough

Dhall Curry
Recipe by Amy Beh
Cuisine Indian
Type of Dish Central Dish
Cooking Method Curry
Meal Types • Breakfast • Brunch • Dinner • Lunch • Supper • Tea
Goes well with roti canai.
Ingredients
175g dhall, washed and soaked
(A):
3 green chillies
6 cloves of garlic, chopped
1 tsp turmeric powder
1 tbsp curry powder
1 tsp salt
4 cups water
(B):
2 dried chillies, pounded
1.5cm piece ginger, finely diced
1 big onion, finely diced
2 sprigs curry leaves
1/2 tsp mustard seeds
3 tomatoes, quartered
2 potatoes, quartered
1 1/2 cups general santan
1 cup assam jawa juice
1/2 cup pati santan
salt to taste
a pinch of Asafoetida powder
Method
Boil dhall with (A) till soft and cooked. Heat a deep saucepan with oil. Saute (B) until fragrant.
Add in potatoes, mix in one cup santan and bring to a boil. Add in the cooked dhall and the rest of the santan and assam jawa juice. Simmer till potatoes are soft.
Add the tomatoes and the pati santan. Bring to a boil and cook till gravy is thick. Add salt and a pinch of Asafoetida powder for better fragrance and taste.
