I am a strict vegetarian. Do you know of any receipe for chinese vegetarian cooking ?
1. Rice / Noodle varieties
2. Side dishes
I would be really grateful.

FRIED RICE:

Ingredients:
rice,capsicum,carrot,onions,cabbage,soy sauce,
salt,ground pepper,ajinomotto(optional),oil
Method:
Cook 2 cups of basmati rice and cool it in a big vessel so that each rice is separate.THen place
a tawa and put little oil and season it with
mustard seeds and then start frying by first adding onions ,carrot,cabbage,capsicum also add salt to these vegetables while cooking it.Then pour these vegetables into the rice and then with
one teaspoon of oil season it with soysauce and
pepper.Mix all these with rice and add enough salt
Oil and salt are always upto the individual who uses it.IT is not necessary to season it twice.I
suggest this because the soy sauce will contain
molasses which will become very thick if it is fried for a longer time in oil.So if the sauce is
too thick always try to dilute it with waterand then fry in oil for a minute.

Chinese Fried Rice

3/4 cup cubed carrots and peas
1/4 cup chopped bell pepper
1/4 cup sliced green onions tops
1/4 cup chopped brown onion
2 tbsp bean sprouts
2 tbsp peanut oil
2 tbsp soy sauce
1/2 tsp salt
1/2 tsp sugar
3 cups cooked rice (cooled)
1.Mix carrots, peas, bell pepper, green onion tops, brown onion, and bean sprouts together and set aside.
2.Heat 2tbsp oil in the pan/wok.Add carrots, peas, bell pepper, green onion tops, brown onion, and bean sprouts and stir well for 3 minutes.
3. Add soy sauce, salt and sugar. Stir well.
4. Add cooled rice and stir-fry until the soy sauce is absorbed.
5. Remove the rice to the serving platter.

hi all,
Seems everybody wants to know ab't manchurian here is reciepe .It turn out very nice.
1cup chopped carrots
1cup chopped cabbage
1/2 cup chopped spring onions and
1/4 cup chopped garlic
1/4 -1/2 cup soya sauce
corn flour
Ajinomoto
sugar
salt (for balls only )
mix #1 & #2 with little salt and pepper ,squeeze out water add corn flour enough to make balls.Make balls fry it and keep aside.
Saute in low fat oil garlic,onions add pinch of ajinomoto.add a cup of water and 1 tsp. sugar, stirr and add soya sauce till it turn brown may be 1/4 of a cup.Add corn flour (1/2 tsp. to 1 tsp.) or any thickening agnet (u can get tapioca flour easily in USA).Add this sauce on fried balls.garnish with coriander.
For gobi manchurian use gobi instead of #1 #2.
USE green leaves of onion also.
DO NOT ADD SALT. (As soya sauce is salty.)

Dal Makhni
Ingredients:
Black grams 1 cup
Bengal grams 1/2 cup
Kidney beans 1/4 cup
Ginger 1 inch
Green chilli 2-3
Butter 4 tbsp.
Cream 2 tbsp.
Finely chopped tomatoes 3
Finely chopped onions 2
Garlic 7-8 pieces
Cumin seeds 1 tsp.
Asafoetida 1 pinch
Red chilli powder 2 tsp.
Salt to taste
Method:
1.Thoroughly wash black grams, bengal grams and kidney beans. Then soak it in water (2 glasses) for about 7-8 hours .
2.Add ginger and garlic to the above. Pressure cook for about 10 minutes (3-4 whistles). Then reduce the heat to 'medium' and cook for about 15 minutes. Remove ginger-garlic from the cooked grams and make a paste.
3.Heat 2 tbsp. of butter in a pan.
4.Fry asafoetida and cumin seeds in it. Add thinly sliced green chilli. Heat till it gets slight brown in color.
5.Add ginger-garlic paste and finely chopped onions. Fry until golden brown.
6.Add chilli powder, finely chopped tomatoes and salt. Cook until the mixture thickens into pulpy sauce (about 3 mins).
7.Then add cooked grams and kidney beans to the mixture. Heat for 4-5 minutes. You can add a little water if you find it too thick.
8.Add the remaining butter and cook for 2 minutes.
Dal Makhni is ready to serve. Decorate with cream.
Rajma
Ingredients:
Rajma 1 cup
Onion 1
Tomato 1
Green chilli 1
Garlic 4-5
Ginger an inch
Red chilli powder 1 tsp.
Turmeric powder 1/2 tsp.
Dry coriander powder 1 tsp.
Garam masala powder 1 tsp.
Vegetable oil 3 tbsp.
Salt to taste
Coriander leaves for garnishing
Method:
1.Soak rajma in water for overnight. Pressure cook rajma until tender.
2.Cut onion, tomato and green chilli. Grind it in mixie along with ginger and garlic and make paste.
3.Heat oil in a pan. Add the paste and fry on medium heat until golden brown (The oil starts separating from the mixture).
4.Add red chilli powder, turmeric powder, coriander powder, garam masala and salt. Mix well. Fry for 2-3 minutes.
5.Add water enough to make thick gravy. Bring the gravy to boil.
6.Add cooked rajma (along with the water in which it was cooked). Stir well and cook over medium heat for 5-7 minutes.
Garnish with chopped green coriander leaves and serve hot.
