Kefir/keffir/kephyr all stand for a Miracle in Kitchen.
Secret of long life of caucus mountain folks (100yrs minimum) is credited to this simple curdish/fermented milk.

Hello Ivete,
I must thank you for introducing me physically to Kephir .
After I received the actual grown culture from you ,
I grew it in milk just like curds and that was the beginning of a Miracle.
I was suffering from lack of proper intestinal flora after prolonged treatment of stomach infection.
Common antibiotics had become useless and I had to take strong super drugs to fight off Common colities germs.
After starting to consume Kefir, within two days my stomach became normal, my diet increased to normal and my eye infection by a fungus (Internally) decreased miraculously.
This has prompted me to write this thank you note.
I have made Kefir cheese which is better than other cottage cheese we make and the texture and taste is great.
I aim to post more on this cheese and recipes made from Kafir after starting the experiment soon.

Hello Mr.Hemant!
After reading yr response to Mrs.Evete, I wanted to know about Kefir and learned something about it through the Internet. Could you please explain about its impact on human health? Where we can get this kefir granules in india? Could it cause side-effects as the Englishes medicines? Hope you will give a detailed explanation.

THE FOLLOWING KEFIR NOTES COME FROM BARRY HILTON WHO HAS BEEN USING KEFIR FOR MANY YEARS
KEFIR - THE WAY TO A HEALTHY & LONG LIFE
Kefir is a carbonated and low alcoholic drink which originated in Caucasus (Southern Russia). The Kefir culture contains the anaerobic clostridium bacillus “Sansaeszus” which causes fermentation in cows milk and tastes very similar to Sour Cream and Yoghurt, but is claimed to have far more reaching medically beneficial effects including longevity.
PROCESS
The Kefir is placed in a glass jar with a plastic lid (Not metal & no foil inside the lid), and allowed to stand at room temperature in a darkened cupboard until the desired strength is reached. The following details are based on a room temperature of 18 to 20 degrees for 12, 18, 24, 36 and 48 hours. As a general guide, if the temperature is doubled, the effective fermentation period is halved.

In dependence on the duration of fermentation, the milk obtains varying degrees of thickness and also varying effects. The effects of Kefir have been the secret of the people of Caucasus for a long time. From their early youth, they drink Kefir instead of water and eat Kefir thickened in place of dessert. Their life expectancy is between 110 to 150 years (the latter not being a rare occurrence). THEY DO NOT HAVE CANCER, TURBERCULOSIS OR DIGESTIVE DISORDERS.
THERAPEUTIC EFFECTS
Professor Dr. Kanschlikow devoted a large part of his life to the study of the Kefir and has observed its healing effects on the following disorders/illnesses: Catarrh, digestive troubles, stomach ulcers, anaemia, all kinds of excema, arterial nodes, bilious complaints, hepatitis, diarrhea, constipation and high blood pressure, to name but a few.

Kefir Cultured Milk (KCM) is not digested in the stomach, but is absorbed directly by the blood stream. KCM prevents the decay of residual substances in the intestinal tract. It has a beneficial influence on the process of convalescence and may even be administered as a substitute for mother’s milk, because it is more easily digested than straight cows milk or powdered substitutes. Use 12 hour Kefir if the baby is constipated or 18 to 24 hours Kefir if motion is normal. 12 hours KCM is a milk laxative. 18 to 24 hours KCM is normal. 36 to 48 hours KCM causes constipation.

It may be taken daily, in the morning or with the evening meal (also as a sweet alone in place of Yoghurt). It may be used in lieu of sour cream for salads and sauces. In the case of serious illness, one must drink up to 1 litre of KCM daily to gain the greatest benefit. KCM is not only a medication, but is also special nourishment.
Based on today’s knowledge KCM has been observed to have therapeutic effects as indicated in respect of the illnesses and disorders listed below:
Nervous Disorders I litre daily with meals, in severe cases for life. Sleeplessness disappears without the aid of tablets. Appetite returns and in most cases depression disappears. (18/24 hrs KCM).

Liver problems 1 litre a day, the patient enjoys a restful sleep without medication. (18/24 hrs KCM).
Stomach Ulcers 1 litre a day as long as the illness dictates.In recorded cases the ulcers have disappeared after two months.(18/24 hrs KCM).
Anemia 1 litre daily. In adults, normal blood builds up in 3 months. (18/24 hrs KCM).
Decomposition of Blood 1 litre daily, in severe cases 2 litres daily. (18/24 hrs KCM).

Constipation 1 litre of 12 hours KCM daily. After bowel movement has normalised, continue taking KCM but use 18/24 hrs

Diarrhoea 1 litre of 36/48 hours KCAI daily until fluidity of faecal motion is controlled. Then continue with 18/24 hrs KCM as desired.
Stamina If taken regularly, the Senior citizen will experience marked improvement in vitality. If I litre is consumed daily by Athletes during training they will notice improved drive and stamina in just two to three weeks with regular daily use.

DAILY PREPARA TION OF CUL TURE
The Kefir culture will last indefinitely if looked after. (It will also multiply; the excess being cryogenically kept in the freezer in a small glass jar full of milk). Storing in the non-freezer part of the fridge during fermentation will slow down the procedure, if delay required, for up to one week before spoiling.

1. Place Kefir culture in a clean glass jar containing no less than 1 cup of milk (a 1 cm diameter piece is adequate). The milk should be about the same temperature as the Kefir, so as not to cause stress or shock. USE ONLY, A NON METAL LID.
2. Place in a dark cupboard and leave for up to 24 to 48 hrs as desired. It doesn’t like sunlight, heat nor metal objects.
3. When ready, shake container before pouring into PLASTIC strainer to catch the culture and separate it from the Kefir milk drink. Add some blackcurrant cordial if desired. ( I add to Vanilla Whey powder and 1/2 a banana and whiz to a smoothie - delicious Ed. )
4. Wash the culture in cool to ambient temperature clean water from the tap and repeat step 1 above.

Helpful Hints:
It is a good idea to mix a little of the previously cultured milk (about a tablespoon or leftover in separation jug) with the fresh milk before adding the Kefir to improve fermentation.
Stand the glass jar of fresh milk in a bowl of hot water for a few seconds to take off the chill before adding Kefir. (Don’t use the microwave). Use glass, plastic of earthenware materials only. Soggy Kefir is sick. Healthy Kefir is firm like cauliflower.
