My dad is a diabetic . Somebody told me that Oats is good for his health. Can help me to make some items with Oats |

Apricot Honey Oatmeal
3-1/2 cups water
1/2 cup chopped dried apricots
1/3 cup honey (optional)
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
2 cups Oats
In 3-quart saucepan, bring water, apricots, honey, cinnamon and salt to a boil.
Stir in oats; return to a boil.
Reduce heat to medium; cook about 1 minute for quick oats (or 5 minutes for old fashioned oats) or until most of liquid is absorbed, stirring occasionally.
Let stand until of desired consistency.
4 SERVINGS
Ps: If desired substitute raisins, dried peaches or pears, dried cranberries or blueberries, dried apples, dates or diced mixed dried fruit for apricots.
I have heard that reducing the amount of carbohydrates intake for diabetic patients can help improve their blood-sugar level and for beginners,they may even get rid of diabetis disease for good!
High carbohydrate foods include rice,wheat,maida,starchy vegetables like potatoes,carrots,suran,lentils like beans,daals and sweet dishes made with sugar, and milk.
Low carbohydrate foods include all other leafy,green vegetables,meat,fish, eggs,and other natural unprocessed foods like fruits,whole grains and oats,rye,barley, millet, wild rice, couscous or buckwheat.(of course all in limited portions).

Oatmeal
2 cups Oats uncooked
1/3 cup granulated sugar(optional)
1/4 teaspoon salt (optional)
3-1/3 cups fat-free milk
2 eggs OR 1/2 cup egg substitute, lightly beaten
2 teaspoons vanilla
1/3 cup firmly packed brown sugar (optional)
Heat oven to 350mF. Spray 8-inch square glass baking dish with cooking spray.
In large bowl, combine oats, granulated sugar and salt. In medium bowl, combine milk, eggs and vanilla; mix well. Add to oat mixture; mix well. Pour into baking dish.
Bake 40 to 45 minutes or until center jiggles slightly. Remove from oven to cooling rack.
Sprinkle brown sugar evenly over top of oatmeal. Using back of spoon, gently spread sugar into a thin layer across entire surface of oatmeal. Return to oven; bake just until sugar melts, about 2 to 3 minutes. Set oven to broil. Broil 3 inches from heat until sugar bubbles and browns slightly, 1 to 2 minutes. (Watch carefully to prevent burning. It may be necessary to turn baking dish.) Spoon into bowls to serve.

Rich 'n Creamy Baked Oatmeal
1-1/2 cups 2% low-fat milk
2 eggs, lightly beaten
2 tablespoons vegetable oil
1 tablespoon vanilla
2-1/2 cups OATS uncooked
3/4 cup firmly packed brown sugar(optional)
2 teaspoons baking powder
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt (optional)
Optional toppings: fruit & skim milk or yogurt
Heat oven to 350°F. Lightly spray 1½-quart casserole with no-stick cooking spray.
In medium bowl, combine milk, eggs, oil and vanilla; mix well. Set aside.
In large bowl, combine oats, sugar, baking powder, cinnamon and salt; mix well.
Add liquid ingredients; mix until well blended. Let stand about 15 minutes.
Pour into prepared casserole. Bake, uncovered, 35 to 45 minutes or until center is dry and firm to the touch. Cool slightly before serving. Top with fruit and milk or yogurt, if desired.

If you are a diabetic and require to reduce the rice consumption, an easy substitute is:
Mix brown rice, white rice, oats and buckwheat in 1:1:1:1 proportion, cook as you would cook rice. Use this instead of rice with your Indian meals.
(i used to buy a premixed packet of this from Asian stores called "Congee Mix" and now make the mixture by myself as it works out cheaper.
When your digestive system gets used to this, you may drop the white rice and use only the other ingredients. There are numerous health benefits from eating this kind of starch base with your meals.

R,
You can give oats cereal (single grain that you get in supermarkets in the US) mixed with warm water or breast milk or formula to kids older than 4 months.. ofcourse you would need to consult your pediatrician before you start your 5 month old on solids before the child is 6 months old.
I powder the regular oats (Quaker) and add 1 tsp to the porridge I make for my 20 month old.

All chinese (and also korean, japanese, vietnamese stores) sell brown rice in 20 pound bags for under $10. Kokuho, Calrose are popular brands. I will find more brand names from my asian coleagues if you are interested. You may try any brand that you find in these stores. You have to mix some white rice (50-50) if you cook it at first since your stomach may not get used to so much fiber content suddenly. Gradually reduce the white rice content. Cook with more water than usual and for longer.
Hmm... Buckwheat so far only seen in WholeFoods - they store them in bins.
I have seen brown rice in small packets in American department stores like Albertsons, Safeway and Ralphs. They are usually $3-4 for 2 pounds which is expensive in my opinion.
Also seen brown rice in bulk bins in health food stores like Whole Foods and Trader Joes.
If you live in North Cal (Bay area) and you are interested, let me know and I will post the shop addresses.

I just want to know that the Oatmeal(quaker or any company) and Honey nut cheerios or honey bunches of oats are having the same nutrition?

Hi R,
They are the same - but Quaker's plain oatmeal has lesser sugar content tahn Honey Nut Cheerios :)
And Honey Nut cheerios has slmonds added to them, I think.

Hi Ashley,
Thanks for your info. It is just that people always prefer to take Quaker oats than our honey bunches of oats and other cereals.
So, I thought that the latter has a lesser nutrition than the former.
I see most of the people would prefer to taste our regular cereal than the oatmeal!!

sorry ashley, what I meant was, tastewise, cereal is popular with the youngsters and only the elder people takes quaker oatmeal.
