Avanika - Let me share a simple vadai recipe with you.
Venky will provide the rest of the recipes. :-)))
Ulunthu Vadai
Wash and soak ulunthu overnight.
Discard skin and wash again.
Grind in a mixie without adding water.
Add diced ginger, onion, curry leaves, green chilly and salt to the kalavai.
Take a handful, shape it like a ba-ll, flatten lightly on a banana leaf or sheet of clean plastic. Use forefinger to make a nice hole in the center and deep fry.
Can be eaten on its own or with chutney.
For masala vadai, substitute ulunthu with kadalai paruppu. Masala vadais shoudl be fried crispier for execellent taste.

Ingredients:
- Rice and payanthamparuppu (paasiparuppu) in the ratio 3:1.
- miLagu, jeeragam - a couple of table spoons each
- mundhiri paruppu - a handful
- kadugu, karuvEppilai etc.
- ghee and/or oil
All these measurements are approximate. You might need to adjust to suit your taste. :-)
verum sattiyila arisiyayum paruppayum thani thaniyaaga konjam varuththu, kaLaindhu vechchukkunga. Take care, it will be hot. :-) Then kadugu, miLagu, jeeragam, karuvEppillai, perungaayam ithu ellathayum thaaLichindu, uppai pOttu, kaLaindha arisi, paruppayum kalandhu, ithai vida oru 2 madangu thanni vittu, cooker-la nallA kuzhayara varaikkum vEga vidunga. ven pongal thayaar. Ofcourse you shd add ghee roasted cashews to it.
(My conventional way is to cook the rice and paruppu together and then add the rest of the stuff, but my firend made it the way I have described and it tasted good. Andit seemed easier. :-).
